The first Yalla grill was lit in Beirut in 1995 — a charcoal pit, a spit of lamb, and a street that never quite went to bed. The recipes crossed the Mediterranean the way recipes should: by hand, in a family, without shortcuts.
Today the same fire burns on Great Tower Street, two minutes from Tower Hill. The toum is still pounded fresh, the bread still blisters to order, and the spit still turns long after the City's lights go out. Fully halal, always charcoal — never gas.
